Texas Ranger 9-Bean Soup

The Nine Bean Soup Mix in the list of ingredients refers to the prepared, packaged mix that you should be able to find on the bean aisle in your grocery market.

Ingredients
• 2 to 3 cups of Nine Bean Soup Mix
• 1 pound ham, diced
• 1 large onion, chopped
• 1 clove garlic, chopped
• 1 10-oz. can Rotel tomatoes and green chilis
• 1 16-oz. can tomatoes and liquid, broken up
• Salt and pepper to taste

Preparation
Wash and sort beans. Place in a Dutch oven and cover with water two inches above beans. Let soak overnight. Drain beans. Cover with water and add the other ingredients. Bring to a boil, reduce heat and simmer, covered, for about two hours until the beans are done. Stir occasionally to prevent sticking. Adjust seasonings. Tip your hat to the Texas Rangers.
